Welcome back, campers!! This week’s theme is Food Truck Fusion. This week, we will be celebrating the blending of different cuisines and cultures through street food! We will explore a variety of flavors and techniques both familiar and unexpected!
Our first day started in the garden with a garden tour. We met our favorite gardener, Marian, who showed us the way of the garden. We can’t wait to get our hands dirty planting, weeding, and doing other fun activities in SLU’s garden throughout the week.
After the garden, we head upstairs to cook lunch for the day! Today’s menu included Korean Style Chicken Tacos with Salsa Verde, Cabbage Slaw, and Caramelized Onions! First, we marinated our chicken in a mixture of soy sauce, garlic, rice wine vinegar, and a dash of sugar for sweetness. The salsa was made by blending jalepenos, coconut cream, rice wine vinegar, cilantro, and garlic together into a slightly chunky puree. It was spicy, but paired really well with the chicken. Everyone also got to try their hand at caramelizing some onions. It was a really awesome lunch!
After lunch, the campers head outside to get some fresh air and learn a few things about MyPlate! We played a Food Group Relay game where the campers learned about the five food groups. The campers also played Sharks and Minnows to get out some extra energy! Plus, we also learned about the importance of playing in the sun while protecting our skin from harmful rays! It was a great time, and we learned a lot!
In the afternoon, the campers prepared their own bagged lunches for Tuesday’s field trip! Lunches included Turkey sandwiches using smoked turkey made at Saint Louis University, cheddar cheese, romaine, and Companion bread! The campers cut their own crudites and made a fantastic and creamy Green Goddess Dressing using herbs from the garden including tarragon, chives, and dill. A fresh fruit salad was prepared with grapes, cantaloupe, apples, and strawberries. Billy Goat Chips were added to the lunch to finish it off. The campers decorated their lunch bags and stuffed them full with this yummy lunch! We can’t wait to eat an awesome picnic lunch tomorrow after our field trip!
Tomorrow is field trip day! We will be visiting the International Institute Global Farms located in the Botanical Heights Neighborhood. Remember to wear closed toe shoes and bring back your release form if yours has yet to be signed! We can’t wait!
